Sponge Dough Bread

Step 1 (Mixture A):
Beat 560g high protein flour, 7g yeast, and 340g water together and let it rest for 3 hours.
Step 2 (Mixture B):
240g bread flour
12g SoftPro bread softener
30g full cream milk powder
A pinch of salt
Beat the mixture together in high speed until it is smooth, add in 120g salted butter and continue beating for 8 minutes.
When mixture B is forming small dough, add in Mixture A and continue beating together in high speed. Let it rest for 1 hour.
Cut the dough into small pieces (50g) each and wrap in fillings of your preference. Brush the surface with egg and bake at 400° until the bread turns golden brown.
